Backyard Garden Fried Rice

Farm-fresh vegetables and sausage tossed with rice, egg, and soy sauce.

Serves 6

 

Ingredients

  • 12 oz Traditional Beef or Spicy Cajun Summer Sausage, small diced
  • 1 teaspoon sesame oil
  • 1 medium onion, small diced
  • 1 red or green bell pepper, small diced
  • 1 clove garlic, minced
  • 1 tablespoon minced fresh ginger
  • 2-3 tablespoons Soy sauce and more to taste
  • 3 cups cooled cooked brown or white rice
  • 2 eggs, beaten
  • Cilantro, chopped
  • 4 green onions, minced

 

Instructions

  1. Heat a medium skillet on medium-low heat.  Add sausage, sesame oil, and onions, stirring until translucent; about 5 minutes.
  2. Add peppers, garlic, ginger, and soy sauce and cook for 5 minutes. Add rice and stir until combined. Stir in the beaten egg and cook until the eggs are cooked.
  3. Serve with green onion and cilantro.
