Ingredients
12 oz Traditional Beef or Spicy Cajun Summer Sausage, small diced
1 teaspoon sesame oil
1 medium onion, small diced
1 red or green bell pepper, small diced
1 clove garlic, minced
1 tablespoon minced fresh ginger
2-3 tablespoons Soy sauce and more to taste
3 cups cooled cooked brown or white rice
2 eggs, beaten
Cilantro, chopped
4 green onions, minced
Instructions
Heat a medium skillet on medium-low heat.Add sausage, sesame oil, and onions, stirring until translucent; about 5 minutes.
Add peppers, garlic, ginger, and soy sauce and cook for 5 minutes. Add rice and stir until combined. Stir in the beaten egg and cook until the eggs are cooked.
