A hearty chili packed with beans, tomatoes, sausage, and warm spices.

Ingredients
12 oz Spicy Cajun Smoked Summer Sausage, minced
1 medium onion, small diced
2 cloves garlic, minced
½ teaspoon ground cumin
1 teaspoon paprika
1 tablespoon chili powder
Pinch of Salt and pepper
1 28-oz can crushed tomatoes
1 15-oz can diced tomatoes
1 15-oz can black beans rinsed and drained
1 15-oz can pinto beans rinsed and drained
1 15-oz can dark red kidney beans rinsed and drained
7 oz Monterey Pepper Jack Cheese, shredded
Corn tortilla chips
Sour cream optional
Instructions
Heat a medium Dutch oven on medium-low heat.Add minced sausage and onions, stirring until translucent; about 10 minutes.
Add garlic and cook for one minute. Add cumin, paprika, chili powder, salt and pepper. Add the tomatoes and beans. Bring to a simmer and cook for 30 minutes.
Ladle the chili into bowls and serve with shredded cheese, tortilla chips and sour cream.
